I love pan fried eggplant , but it soaks up SO much oil. Try this technique to make delicious pan fried eggplant using a minimal amount of oil. The eggplant turns out golden and delicious.

🌱Stovetop Eggplant 🌱

INGREDIENTS:
1 large eggplant
Spray oil
1/4 cup of water

Wash the eggplant and slice it into 1/4 inch rounds . Heat a large frying pan over medium high heat . Spritz each side of the eggplant slices with a little oil. Add the slices to a pan and cook on each side for about 2-3 minutes. Add the water to the pan and cover it. Let it cook covered for about 2-3 minutes until the eggplant softens. Remove the cover and let the eggplant cook for another 1 to 2 minutes until golden
