Recipes – We don’t measure much in our home cooking but here’s a guide for what we made to help you:
Cookies
Mix flax eggs 3 tbsp ground flax + 6 tbsp water
3/4 cup coconut oil + 1 1/2 cup coconut sugar
Add flax eggs to sugar and oil mix
Add 2 1/2 cups freshly ground flour
1 tsp baking soda
Measure chocolate chips with your heart and add to batter
Don’t over mix dough, mix just until flour is incorporated
Dollop 2 tbsp worth of cookie dough on parchment lined baking sheet and bake at 350 F for about 8-10 mins
Blueberry Muffins
Mix 4 tbsp ground flax + 9 tbsp water and set aside to congeal
Mix 1/2 cup coconut oil with 1 1/2 cups sugar and whisk
Add flax eggs and mix
Add 3 cups flour, 1 tsp baking soda and 2 tbsp vinegar
Check consistency because every flour is different – add water if needed but batter should be a thick pancake consistency.
Add blueberries and walnuts
Bake at 350 F for 35 mins
