** EASY VEGAN EGG MAYO – WITH HACK EGG WHITES **

RECIPE (MAKES 4 SANDWICHES)

INGREDIENTS
6 Tbsps of Vegan Mayo
1/2 Tsp of Mustard Powder
1/2 Tsp of Turmeric (only for colour)
1/2 Tsp of Black Salt/Kala Namak
1 Tbsp of Apple Cider Vinegar
1 Block of Firm Tofu Crumbled
1 Cup or 30 Pieces of Cooked White Pasta

METHOD
1. Add mayo, turmeric, mustard, black salt and vinegar to the bowl and mix together to form a yellow yoghurt type consistency
2. Crumble the tofu into it with your hands to make the yolk
3. Blend or Process the cooked white pasta for just a second so its chopped up lightly (you want the pieces to be medium sized). Alternatively chop them by hand
4. Mix the cooked white pasta into the tofu mix
5. Serve in a white baguette with cress

**EASY VEGAN GREGGS SAUSAGE & BEAN MELT**

INGREDIENTS
Jus Rol Puff Pastry Sheets
Tin of Vegan Baked Beans & Sausages
Drop of Plant Milk
Sprinkle of Grated Vegan Cheese

METHOD
(Preheat oven to 180degrees)
1. Roll out pastry sheet (keep it on the provided paper to save it sticking, which we forgot to do this time haha)
2. Divide pastry sheet into 4 rectangles
3. Add a dollop of beans & Sausages (cut up the Sausages to make displacement easier)
4. Sprinkle with a little vegan cheese
5. Fold over pastry, trapping the mixture and pinch the edges lightly
6. Crimp edges with fork
7. Cut 3 slits on top with knife
8. Transfer to lined baking tray
8. Brush pastry with plant milk
9. Put in oven for 15-20mins or until golden brown
10. Put into a Greggs paper bag to complete the eating experience

**3 INGREDIENT CHOCOLATE SPREAD**

INGREDIENTS
One Jar of Light Tahini
4 – 5tbsps of Hot Chocolate or Cocoa
A Squirt of Vegan Sweetener

METHOD
1. Pour tahini into a bowl
2. Mix in the cocoa powder (sieving it in creates a smoother paste)
3. Add the sweetner (use as much as your tastes prefer)
4. Stir frantically until it looks like #chocolatespread and pour into a jar
5. Lasts for ages! We prefer it kept in the fridge as it tastes nicer cold

**VEGAN MALTESER HOT CHOCOLATE**

INGREDIENTS
– 3 Heaped Teaspoons Vegan @horlicksuk
(Can be bought at @asda)
– 3 Heaped Teaspoons Cadbury Hot Chocolate (Available most supermarkets)
– Dairy Free Squirty Cream (Available most supermarkets)
– Vegan Sprinkles (Dr Oeteker Dinosaur & Unicorn are vegan and at most supermarkets)
– Chocolate Eggs (by @moo_free_chocolates at Tesco)

METHOD
1. Add one mug of plant milk to a saucepan
2. Then add the horlicks and hot chocolate
3. Whisk on a medium heat until the whole thing is warm and thick
4. Pour into a cup
5. Squirt Cream on top and add sprinkles
