I am so excited to share this weeks video with you, I have put together three super easy slow cooker recipes that you can make at home in advance! They are all super affordable and really delicious. Fully recipes and quantities are down below.

RECIPES:

CREAMY LEEK AND MUSHROOM PIE:
– Olive oil
– 3 leeks
– 300g chestnut mushrooms
– 100g frozen peas
– 1tbsp dijon mustard
– 100ml white wine (doesn’t need to be expensive)
– 150ml double cream
– 500ml vegetable stock (I use two cubes for more flavour)
– 50g plain flour
– 2 garlic cloves
– 1tsp thyme (fresh or dried)
– 1 sheet of ready made puff pastry
– 1tbsp milk for egg wash
– Asparagus spears to serve (optional)

MUSHROOM CURRY:
– Olive oil
– 300g chestnut mushrooms
– 2 portobello mushrooms
– 1 large white onion, diced
– 4 cloves of garlic, crushed
– 1 green/red chilli
– 1 courgette sliced
– 1 thumb sized piece of ginger
– 1tbsp garam masala
– 1tsp turmeric
– 1tsp mustard seeds
– 1 tbsp tomato purée
– 1 can of coconut milk
– 4 ripe tomatoes or 10 cherry tomatoes
– 300ml vegetable stock
– lemon to serve
– yoghurt to serve
– coriander to serve (optional)

ROOT VEG HOT POT WITH DUMPLINGS:
– 2 tbsp vegetable oil
– 1 small butternut squash or sweet potato
– 2 onions, sliced
– 3 carrots, peeled and cut into chunks
– 2 parsnips, peeled and cut into chunks
– 2 tbsp plain flour
– 400g tin chopped tomatoes
– 2 tbsp tomato purée
– ½ tsp dried chilli flakes (optional)
– 3 tbsp pesto (optional)
– 350ml/12fl oz hot vegetable stock (made with 1 stock cube)
– 100g/3½oz young spinach leaves (optional)
– salt and freshly ground black pepper
For the dumplings:
– 200g self-raising flour
– 75g frozen butter (or vegetable suet)
– 125ml cold water
– salt and freshly ground black pepper
