Healthy Meal Prep: Vegan Lunch Bowls + Chocolate Smoothies (in 30 minutes!)
Here’s a healthy meal prep routine that you can accomplish in just 30 minutes. Today we’re making vegan lunch bowls with a creamy Italian dressing, and chocolate smoothie bags for a fast breakfast. Recipes & shopping list below!

ROASTED VEGETABLE SALADS:
To assemble this salad for lunch, start with a base of chopped lettuce, roasted Brussels sprouts and artichoke hearts, cooked green lentils, and top it generously with the Creamy Italian Dressing.

CHOCOLATE SMOOTHIE BAGS:
Ingredients per bag:
4 to 5 Medjool dates (pitted)
2 tablespoons hemp hearts
1 tablespoon chia seeds
1 heaping tablespoon cacao powder
1 large handful baby spinach
To blend: Combine the contents of the bag with 3/4 cup water and blend until smooth. Add 1 heaping cup of ice cubes and blend again until a milkshake-like consistency is achieved. Serve right away.
