Here’s what you’ll need to make this AMAZING tempeh reuben sandwich:
For the sandwich:
4 pieces of rye bread
2 tbsp sauerkraut per sandwich
vegan cheeze
vegan margarine (to spread on the bread)
1 block of tempeh
For the marinade:
1/2 cup veggie broth
1 tbsp balsamic vinegar
1 tbsp vegan worcestershire
1 tsp liquid smoke
1 tsp each onion and garlic powder, smoked paprika
1/2 tsp dijon mustard
sprinkle of red pepper flakes
1 tbsp of beet kraut (optional, just for the color)
salt to taste
For the Russian dressing:
1/4 cup mayo
1 tbsp each of ketchup and relish
1 tsp lemon juice
1/2 tsp vegan worcestershire
salt and pepper to taste

Steam the tempeh for 10 minutes to get rid of its bitterness.
While this is steaming, prepare the marinade and russian dressing in separate bowls and set aside (make sure the marinade bowl will be big enough to hold the tempeh as well.)
Once the tempeh is steamed (and has cooled a bit) slice into strips and add to the marinade. Ideally, marinate overnight (if time permits) or for at least 2 hours.
To prepare the tempeh, pan fry in a bit of oil until brown (reserving marinade) and then once browned, add the marinade to the pan and cook until it has reduced to a nice thick sauce.
To make the sandwiches, butter your bread and place in the pan (off the heat.) Then add your vegan cheese, tempeh, sauerkraut and slather the other piece of bread with russian dressing. Then butter the top of that once you’ve placed it on the sandwiches.
Cook over medium heat until the bread is nice and toasted. Enjoy!!!
