Vegan Meal Ideas for Beginners! (cozy & tasty)

Hi! I’m back with another batch of easy and cosy vegan meal ideas + some advice for vegan beginners ✨ Today’s line up: Crispy Broccoli Wraps, Super Easy Potato Curry Soup, Simple Hummus Pasta and some Cozy Apple and Chai Porridge.

#1 Overnight Tofu Hummus Pasta

for the tofu:

1 block firm plain tofu (200g) (7.05 oz)
1 tbsp soy sauce
1 clove garlic, chopped finely
1 tsp mustard
1 tbsp tomato purée
2 tsp olive oil
1 tsp agave or maple or rice syrup
¼ tsp salt, if needed more to taste
spices of choice

for the pasta:

1 bell pepper
1 onion
oil for the pan
¼ cup white wine (or orange or apple juice) (60ml)
~180g pasta (6.3 oz)

for the hummus sauce:

2 heaping tbsp store bought hummus
1 tbsp nutritional yeast
1 tbsp lemon juice
¼ cup non dairy milk (60ml) more to adjust the consistency if needed

season to taste before serving 🙂

serve with greens + vegan cheese (optional)

#2 Tomato-y Potato Curry Soup

1 onion
1 ¼ tsp curry powder
Oil for the pan
2 handfuls of mushrooms
2 handfuls of yellow potatoes
1 tbsp tomato purée
¾ cup marinara sauce (180ml)
2 cups vegetable broth (500ml)
1 can coconut milk (400ml) (13,66 fl oz)
Juice of ½ lemon
Salt to taste
optional other spices like paprika, cumin, pepper …

4 servings of cooked rice or quinoa or bulgur

→ serves 3-4

#3 Apple and Chai Porridge

1 cup non dairy milk (250ml)
½ cup small cut oats (45g)
2 tsp ground flax seeds
a generous pinch of salt
½ tsp cinnamon or pumpkin spice (pumpkin spice can be very intense so beware haha maybe add only ¼ tsp to begin with)
3 tbsp unsweetened applesauce
½ apple, chopped into small pieces (the other half is for snacking or for topping)

optional: a sweetener of some sort (like 2 tsp raw sugar)
potential toppings: other apple half, blueberries , cashew butter …

→ serves 1

#4 Crispy Broccoli Wraps

1 smaller sized broccoli / 15-20 broccoli florets
1 cup corn starch or all purpose flour (125g)
½ tsp salt
½ tsp baking powder
spices of choice (I added ½ tsp of each: paprika, dried herbs, tajine spice mix + ¼ tsp chili powder)

1 cup non dairy milk (250ml)
⅓ cup bbq sauce (80ml)

1 cup of bread crumbs. (~110g) Add it to the bowl in 2 batches. Add more if needed.

serve with some dipping sauce, like hummus sauce, vegan sour cream, marinara sauce, vegan mayo …

For the wraps:

greens, tomatoes
unsweetened vegan soy yogurt or vegan cream cheese/sour cream
sriracha mayo

serves 2-4, depending on if you choose to make wraps or only serve the bites as a snack/meal
