SUPER COZY VEGAN RECIPES
Hey everyone! It’s still chilly here in Halifax (and most of Canada) so I thought some cozy meals were in order. These are perfect for making a big batch to share of have for meals during the week. I hope you make them and love them! Recipes below.

RECIPES
TOMATO BASIL SOUP:
1 small/medium sweet potato, chopped
1/2 white onion, roughly chopped
1 clove garlic, chopped
1 28 oz can diced tomatoes
salt & pepper to taste
handful of fresh basil or 1-2 tsp dried
Cook sweet potato. In a frying pan, cook onions and garlic until translucent and lightly browned. Add sweet potato, onions, garlic and tomatoes to a blender and blend until smooth. Add to a pot and season with salt and pepper. Add basil. Serve hot. Add grilled cheese croutons for best experience.
LOADED BAKED POTATO SOUP:
1/4 cup vegan butter
1/4 cup flour
2 cups non-dairy milk
2 medium potatoes, chopped
1 cup veggie broth (if needed)
salt & pepper
1 tbsp vegan sour cream/ vegan cream cheese (optional)
1/4 cup green onion, chopped
vegan cheddar cheese, coconut bacon, green onion for topping
LAVA CAKE:
I followed this recipe but left out all the coconut shreds and flakes.
