Today we are going to make stir fry vegan SHIRATAKI NOODLES. Shirataki noodles a.k.a. ZERO CALORIE noodles, ZERO CARB and MIRACLE noodles. Yes you heard it right. Shirataki noodles contain ZERO CALORIES and ZERO CARB! This is a healthy Japanese recipe that you will enjoy. It is oil free, sugar free! It is a delicious whole food plant based recipe.
Great thing about recipe like this is that you can use almost any vegetables of your choice. The more vegetables the better!

What is shirataki?

“The glucomannan noodles come from the root of an Asian plant called konjac (full name Amorphophallus konjac). It has been nicknamed the elephant yam, and also called konjaku, konnyaku, or the konnyaku potato.”
1 bag Shirataki noodles (14oz)
1 maitake mushroom or 5 mushrooms
7oz Chinese broccoli ( about 4-6 stems )
7oz red cabbage ( about 1/4 of small red cabbage )
1/4 red bell bell pepper
a handful of baby spinach
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon minced scallion
1/2 inch ginger grated (about 1/2 teaspoon)
1 garlic pressed (about 1/2 teaspoon)
1/2 teaspoon roasted sesame
1/4 teaspoon red chili pepper powder (adjust to your liking)
1.Open the package and drain the liquid. Place in a colander and wash thoroughly under running water. Set aside. When you open the package, shirataki noodles have an unpleasant odor. Don’t be discouraged. It will be gone once cooked.
2.Mince white part of scallions. We need about one tablespoon for the sauce.
3.Cut vegetables into bite size. Separate Chinese broccoli stems and leaves since it takes longer for stems to cook.
4.Grate ginger and press garlic.
5.Bring 6 cups of water to boil.
6.While waiting for water to boil, let’s make sauce. Combine all the sauce ingredients above and mix.
7.When water is boiled, add noodles and cook for 2 to 3 minutes. Drain and place in a bowl.
8.Marinate the noodles with half of the sauce and stir. Shirataki noodles tend to be very long. In that case cut it into half.
9.Stir fry vegetables. Starting with veggies that take longer to cook such as Chinese broccoli stems ,carrot and red cabbage. Also vegetables that release flavors by cooking longer such as mushrooms, celery and scallions.
10.When these vegetables are cooked, add Chinese broccoli leaves, red bell pepper and marinated noodles. Then add the rest of the sauce and stir.
11.Add baby spinach, stir and remove from heat.
12. Garnish with sliced scallion, sesame seeds and red chili pepper
