Quick & Easy Vegan Dinner Recipes EVERYONE Should Know

✹ Taco-Spiced Tofu & Beans ✹
-1 block firm or extra-firm tofu, pressed
-1 can beans of choice, drained and rinsed
-1 small onion, diced
-2-4 cloves garlic, minced
-1 red or green bell pepper, diced
-2-3 tablespoons taco seasoning (to preference)
-optional add-ins: canned mild green chilis, canned chipotle peppers in adobo

In a nonstick skillet over medium-high heat, sauté onion for about a minute. Crumble in pressed tofu and continue to cook, stirring occasionally, until tofu is golden brown.

Add in garlic and bell pepper and sauté for another 2-3 minutes.

Stir in drained beans and add taco seasoning. Add in a splash of water if needed to coat the ingredients with the taco seasoning. Taste and add more taco seasoning if needed. Also adjust salt and pepper.

✹ Easy Vegan Cashew Cheese ✹
-1 cup raw cashews, soaked in hot water for 30+ minutes
-3/4 cup water (add more if needed)
-1 tsp onion powder
-1/2 tsp garlic powder
-1/2 tsp paprika
-3 tablespoons nutritional yeast
-1 tablespoon lemon juice
-1/2 teaspoon salt (more to preference)
-optional: nacho jalapeños

Blend all ingredients except for the nacho jalapeños until smooth. Add in extra water 1 tbsp at a time if needed to get everything moving in the blender. Taste and adjust salt and lemon juice to preference. Add in jalapeños and pulse the blender a few times to chop. Enjoy!
