Plant-based meal prep for the week (SUPER tasty vegan recipes)

Raspberry white choc oats:

Chickpea smash:
2 x 400g cans of chickpeas, drained and rinsed
1/3 cup cashew cheese
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp veggie stock powder
1 tbsp nutritional yeast
*add water if mixture is too dry

Cous cous salad:
Crispy chickpeas:
1 x 400g can of chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp veggie stock powder
*baked in the oven for 20 mins at 180 degrees celsius

Pesto:
Large handful basil
3/4 cup raw cashews
1 tbsp nutritional yeast
1 tsp veggie stock powder
1/8 cup lemon juice
1/8 cup olive oil

The rest of the salad:
2 cups pearl cous cous, cooked as per packet instructions
2 cucumbers, roughly chopped
1 punnet cherry tomatoes, halved or quartered
Fresh greens, as desired

Spinach ricotta spirals:

Choc pb granola:
1/2 cup smooth peanut butter
1/4 cup maple syrup
1/8 cup coconut oil
1 tsp vanilla extract
1/2 cup rolled oats
1 cup macadamias
1/2 cup flaked almonds
1/2 cup pecans
1/2 cup dried apricots
1/8 cup cocoa powder
Pinch of salt
*baked for 15 mins, tossing once at halfway, at 180 degrees celsius

Sticky orange tofu:
Crispy tofu:
600g firm tofu
2 tbsp corn flour
1 tbsp vegan chicken stock powder
1 tbsp olive oil

Sticky orange sauce:
1 tbsp olive oil
2 cloves of garlic, crushed
2 tbsp tomato paste
1/2 cup soy sauce
1/4 cup rice wine vinegar
3 cups orange juice
2 tbsp corn flour mixed with 1/3 cup water

Harissa peanut stew:
Crispy tofu:
300g firm tofu
1 tbsp corn flour
1 tsp veggie stock powder
1/2 tbsp olive oil

Stew:
1 tbsp olive oil
1 brown onion, sliced
2 small sweet potatoes, diced, skin removed
2 tbsp harissa paste
3 tbsp tomato paste
3 and 1/2 cups water
2 tbsp veggie stock powder
1/2 cup smooth peanut butter
1/2 bunch kale, roughly chopped, stems removed
1 x 400g can chickpeas, drained and rinsed
