One Pot Lentil and Spinach | Easy One Pot Vegan Recipes



This is the perfect ONE POT Vegan Lentil and Asian Spinach curry for when you don’t have nothing else to make , but still want something healthy, hearty and filling! This curry is SO easy and fast to make and very delicious, using plant-based ingredients. It is vegan, gluten-free, oil-free, dairy-free and high in protein!
Mixed lentils:

Ingredients:
Ingredients
1 tbsp oil
1 onion
1 tsp garlic paste
1 tsp turmeric
1 tsp chili powder or paprika
1/2 tsp garam masala
1 tsp cumin powder
Salt to taste
1 cup mixed lentils washed and soaked for 30 min
2 cups water
2 lb Malabar Spinach(asian spinach) or Regular Spinach
1/2 Water
Cilantro
this is so comforting and just great with rice or naan or roti.
