🥣 Ingredients:
1 medium-size sweet potato
3oz | 80g | 1 cup rolled oats
2tbsp ground flaxseed
8oz | 250ml | 1 cup dairy-free milk
2oz | 60ml | 1/4 cup oil
1tbsp Apple cider vinegar
4.5oz | 130g | 1 cup brown rice flour
1tbsp baking powder
1/4tsp cardamom
🥣 Toppin:
8oz | 250g sliced mushrooms
1tbsp miso paste
large handful of spinach (3.5oz | 100g)
dairy-free cream cheese
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗These sweet potato waffles will keep well in the fridge for 2-3 days and in the freezer for a month.

🥣 Method:
Peel and cut 1 medium-size sweet potato.
Steam until tender.
Place cooked sweet potato slices in mixing bowl.
Add 3oz | 80g | 1 cup rolled oats.
2tbsp ground flaxseed.
8oz | 250ml | 1 cup dairy free milk.
2oz | 60ml | 1/4 cup oil.
1tbsp Apple cider vinegar.
Blend until smooth.
Sieve 4.5oz | 130g | 1 cup brown rice flour.
Add 1tbsp baking powder and 1/4tsp cardamom.
Mix well.
Spray waffle maker with a little oil.
ℹ️ Fill waffle maker with the mix according to manufacture’s recommendations.
Cook until crispy, golden brown and cooked through.
Lightly grease pan with oil.
Add 8oz | 250g sliced mushrooms.
Cook until golden-brown.
Add 1tbsp miso paste.
Mix until combined.
Add large handful of spinach (3.5oz | 100g)
Cook for 1-3 minutes.
Serve sweet potato waffles with dairy-free cream cheese and mushrooms.
