Hi friendddds! ya girl is backkkk and sharing a new meal prep video that I hope you enjoy. It wasn’t until I finished cooking everything that I realized, “dang girl, you used a lot of tomatoes lol.” But that’s okay; tomatoes are good for ya.

used this recipe as inspo –
tomato soup (estimated measurements)
Preheat the oven to 390 degrees. In a baking dish, add 9 Roma tomatoes, cut in half, 1 cup of cherry tomatoes, 1/2 yellow onion, cut into small pieces, , and 8 garlic cloves. Drizzle olive oil on top and season with, dried basil, dried thyme, salt + black pepper. Bake for 40 mins
Once the tomatoes, onions, and garlic have finished baking, let the dish cool, then transfer to a large blender or food processor along with 1/2 cup of fresh basil, and 1 tbsp of olive oil (optional). Blend until smooth.
Now, add 2 tbsp of tomato paste and a small amount of oil to a large pot. Cook for 2 minutes. Next, pour the tomato soup with 2 cups of oat milk and 1/4 cup of nutritional yeast.
