Julia's Easy Vegan Pad Thai Recipe – 100% Plant-based Recipes by PlantX

Hey guys today I’m going to show you how to make a plant-based version of the famous pad thai.
I personally love asian food so this is one of my favourite dishes! IT’s super easy to make, healthy and of course…. DELICIOUS!


Pad Thai

• 12.5oz Noodles of choice 350gr, or gluten free rice noodles
• 1 zucchini spiralized into noodles
• 2 carrots spiralized into noodles
• 1 red bell pepper finely slized
• ½ of scallion sliced
• 3-4 garlice cloves minced
• 1 small piece of ginger (optional)
• 10.5oz mushrooms 300gr sliced
• 2-3 tbsp soy sauce
• 2-3 tbsp peanut oil or other oil

Peanut Sauce

• ¼ creamy peanut butter 60ml
• ¼ coconut milk 60ml
• ¼ cup soy sauce 60ml
• 1-2 tbsp agave syrup
• Squeeze of fresh lime juice
• A bit of water if needed

To serve on top (optional)

• ½ roasted peanuts crushed
• Sesame to sprinkle


• Cut the vegetables with a knife or spiralize them using a spiralizer
• Heat the oil in a large skillet or wok. Sauté the scallions, garlic and ginger, stirring constantly. Then transfer to a plate and set aside
• Heat another table spoon of oil and fry the mushrooms for about 3-4 minutes
• Add the prepared vegetables and sauté until slightly softened, but still crisp.
• In the meantime mix all ingredients for the peanut sauce
• Cook the noodles according to the packing instructions.
• Add the cooked noodles, the scallions & garlic and the peanut sauce to the vegetables.
• Toss to combine and heat until warmed through for about 2-3 minutes, stirring occasionally
• Sprinkle chopped peanuts and sesame over your Pad Thai
• Enjoy
