#1 Chickpea Scramble Meal

1 tbsp olive oil
⅓ cup (40g) chickpea flour
2-3 tbsp spelt semolina
2 tbsp non dairy milk
a generous pinch of salt
½ cup hot water (125ml)

#2 Crispy Salt & Vinegar Potatoes

a couple handfuls of small potatoes (didn’t weigh them haha) – enough potatoes to fill 1 baking sheet when cut into slices, make sure each piece has a bit of room
a drizzle of olive oil
1 tbsp white wine vinegar
a generous pinch of salt

served with baba ganoush and steamed brocc

#3 Dirty Chai Latte Overnight Oats

1/2 cup small cut oats (45g)
1/3 tsp cinnamon
a pinch of each: cardamom, ginger, cloves (all ground)
1 Tbsp ground flax
1/4 cup (60ml) coffee or spiced chai
1/2 cup + vegan yogurt (120g)
sweetener to taste (I used 3 tsp rice syrup)

topped w fresh blueberries and sweet & salty popcorn

#4 Banana Tahini Lassi

2 frozen bananas, cut into chunks
3 ice cubes
1 tbsp white tahini
a pinch of sea salt
~ 1 cup (250g) plain vegan yogurt
¼ cup (60ml) water, more if needed
→ serves 1

#5 Gochujang Spaghetti

100g spaghetti
1-2 tbsp sesame oil
2-3 cloves garlic, minced
2 tsp gochujang (or more if desired)
1-2 tsp tomato puree/paste
½ cup (125ml) soy cream/cuisine (or oat, coconut, cashew cream)
up to ½ cup (125ml) pasta water (start with ⅓ cup (80ml), see if you need more)
salt, to taste
a squeeze of lemon juice, to taste
sesame seeds, for serving
steamead bok choy, for serving
