Ep. 01 But Make it Vegan! Sausage and Peppers Pasta

Hello, my friends and welcome back to another video! Today we are kicking off Veganuary 2024 with a simple Vegan Sausage and Pepper Pasta! This is a vegan version of a meal my mom made for my family growing up. This is the first of a series of videos I intend on creating in 2024 veganizing my family favorites called But Make it Vegan!!

My name is Amanda and I am a home cook who became a Vegetarian in 2022, this channel will follow me and my eating habits as I Journey into Veganism in 2023 and beyond! Let’s eat more plants together! XOX

What you will need:
12 oz bowtie pasta (can be made with 6 oz for less bulky servings)
12-14 oz plant-based sausage cut into ½ inch pieces
1 medium onion chopped
4-6 cloves of garlic minced or crushed (measure with your heart)
3 Large Bell Peppers chopped
4 0z fresh spinach, two huge handfuls
1 can diced tomatoes
1 no-chicken bouillon cube
1 cup water
2 Tbs cornstarch
1 Tbs Italian seasoning
1 Tbs oil
Optional trader Joe mushroom umami seasoning to taste
Salt and pepper to taste
Vegan Parmesan shreds to garnish are optional but recommended
