Easy vegan Sushi Recipe | HOW TO MAKE GREEN DRAGON ROLL
Learn how to make a green dragon sushi roll that is easy, delicious, and vegan!
LAY HO MA everyone! Sushi is one of my absolute favourite things to make and to eat. It is incredibly easy and you only need a few simple ingredients. Let’s begin.
Ingredients:
1 cup sushi rice
1 cup water (another cup for your hands when rolling)
1 cup canned chickpeas
2 tbsp tahini
1 tbsp dijon mustard
1 tbsp white sesame seeds
splash of hot sauce (optional)
pinch of pink salt
splash of lemon juice
2 tbsp rice vinegar
2 sheets nori
2 tbsp black sesame seeds
1 avocado
soy sauce to serve
Directions:
1. wash and drain the sushi rice 3-4 times until the water becomes clear
2. add 1 cup of water to the rice
3. heat the rice on medium high heat. Right when the water starts to bubble, give the rice a good stir to release it from the bottom of the pan. Then, turn the heat down to low and cover the pan. Let it cook for 15min
4. after 15min, turn the heat off and let it continue to steam for another 10min. Do not be tempted to remove the lid to peek
5. in a small mixing bowl, add the chickpeas, tahini, dijon, sesame seeds, hot sauce, pink salt, and lemon juice
6. mash with a fork
7. when the rice is done, transfer it to a large mixing bowl. Then, add the rice vinegar, give the rice a mix, and spread it along the sides of the bowl. Let the rice cool for 5min
8. cover the sushi mat with plastic wrap
9. place the nori on the mat and spread a thin layer of rice onto it leaving about 1/2 inch worth of space at the top. Have a cup of water to dip your hands in – this will prevent the rice from sticking to your hands
10. sprinkle the rice generously with black sesame seeds, then flip over the sheet of rice
11. line about 3-4 tbsp of chickpea filling near the bottom of the sheet
12. roll the mat over while pressing into the sushi roll
13. slice an avocado in half, remove the pit, and peel carefully
14. thinly slice the avocado half into as many slices as you comfortably can
15. carefully spread and place the avocado onto the sushi roll (this may take some practice!)
16. sprinkle with black sesame seeds
17. wrap the roll in plastic wrap and tighten the sides by twisting the plastic wrap
18. slice the roll into bite sized sushi
19. remove the plastic wrap, plate the sushi, and serve with soy sauce
