Easy, Vegan ONE POT MEALS! (Oil-Free, Plant Based, High Protein + High Fiber)

I am so excited to share with you this easy vegan one pot meal that I call, Creamy Cajun Pasta! This meal is not only delicious, its high in protein, fiber and it’s oil free.

My Popular Vegan, Oil-Free, Low-Fat Cheese Sauce:

Recipe (instant pot and stove top)
saute 1 onion, 1 red bell pepper and 3 garlic cloves until soft
add 1 cup corn
1 package pasta
1 can chopped tomatoes
1 can light coconut milk (or 14 oz unsweet plant milk)
3 cups veggie broth
2 tbsp cajun/creole seasoning
1 tsp smoked paprika
1 tsp dry thyme
instant pot – cook 4 mins on high pressure, manually release
stove top – cook until pasta is soft
