🍔Sweet Potato Burgers

10 pitted medjool dates
3/4 cup toasted pecans (or other nuts)
1 tbsp raw cacao powder
2 tsp MegaFood® Daily Energy Nutrient Booster Powder™ (linked below)
1/8 tsp salt
1 cup shredded coconut
Place the dates and nuts into the food processor and blend until the mix looks grainy and sticks together. Be careful not to overprocess over-process. Form the batter into balls, and then roll each into the shredded coconut (pressing to make sure it sticks onto the balls). Serve right away, or refrigerate to firm up. Keep them stored in the fridge.

🍚 Cauliflower Rice
1 head cauliflower
1 tbsp oi (or skip)
1/2 tsp salt

Remove the leaves and core of your cauliflower, then chop it into large pieces that can fit into the food processor.
Place in the machine, and pulse until it resembles the texture of rice.
If you have a small food processor you may have to do this in batches to avoid over processing the cauliflower.
Warm oil in a large skillet or frying pan, then add the cauliflower “rice”. Cook for about 8 minutes, or until tender.

I use a Cuisinart Food Processor.
