WHAT WE EAT IN A DAY | vegan van life (asian inspired!)



We LOVE cooking in our van, but we really have to have some go-to vegan meals to make it doable. Van life can make cooking a little bit more time consuming, but it’s still really fun! In this video, we share with you what we eat in a day including some of our classic vegan van life favorites (like buddha bowls and cranberry sauce), and explore new recipes like vegan ramen (RECIPE BELOW).

CRANBERRY PEAR SAUCE

3/4 of a bag of cranberries (or as many as you would like)
2 chopped pears (you can use apples too)
1/4 cup of chia seeds
1 tsp. vanilla
1/8 cup agave (or any other sweetener)
water

Add all ingredients together. Pour water over the top until you see it peeking through the cranberries and chopped pear. You really don’t need that much, just enough to help it cook down.

Cook (stirring at intervals) on medium-high heat until you can’t really tell the difference between the cranberries and pear. Add more sweetener to taste. Enjoy!

VEGAN RAMEN

1 onion (chopped)
5-6 mushrooms
1 stalk of bok choy
2-3 green onions
2 cloves of garlic
1 bell pepper
vegetable broth
1/3 cup soy sauce
1/2 tbls. green curry paste
1 tbls. miso
water
ramen noodles

Saute all vegetables in a medium-sized pot with some olive oil and green curry paste.

Once onions are translucent, add a combination of water and vegetable broth according to how much water your ramen noodles call for (so if it calls for 3 cups of water, add 2 cups of water and 1 cup of vegetable broth). Add soy sauce and miso. Cover, raise to high heat, and wait until it boils.

Once boiling, add ramen. Cook for as long as the ramen calls for. Once ramen is done, serve!
