Elke Arnesen Biography:
Elke Arnesen currently works as a Success Coach for The Vegan Gym where she is able to combine her passion for veganism with helping individuals accomplish their vegan health and fitness goals.
She went vegan in 2015 and loves to study sustainability in food systems. She is an advocate for supporting local farmers, developing healthy relationships with food, and learning what goes into what we eat to get it onto our plates. Though she went vegan after learning about the environmental impact of animal agriculture, her motivation to eat plants quickly evolved to include personal health and compassion for other beings.
She graduated with top honors and a Bachelor of Science in Biochemistry. Her undergraduate research focused on the effects of peanut consumption on the gut microbiome and glucose regulation. This research is now published in Clinical Nutrition, the official journal for The European Society for Clinical Nutrition and Metabolism.
Having struggled with her own relationship with food and body, her ultimate mission is to bring people closer to their food while developing self compassion and self belief. This allows her to get nerdy with science, share her story, and help others accomplish health & fitness feats they did not think possible before.
