🌱 30 DAYS OF VEGAN 🌱 One Pot Curried Chickpea Stew

Serves: 4
Prep: 10 minutes
Cook: 2 hours

1 onion, finely chopped
4 garlic cloves, grated
Thumb of ginger, grated
1 tsp each turmeric, chilli flakes, cumin, paprika, cinnamon
2x 400g tin of chickpeas, drained and rinsed
500ml vegetable stock
400ml coconut milk (or chopped tomatoes for different flavour)
Salt and pepper
Bunch of kale, stems removed and chopped

Serve with
A handful of mint, or coriander, roughly chopped
Dollop of coconut yoghurt (my favourite is @coconutcollaborative)
Toasted pitta or rice
A squeeze of lemon or lime juice

1. Pre-heat the oven to 160°C.
2. Add all of the ingredients, except the kale, into a heavy-based casserole dish, or slow cooker. Stir through to mix together.
3. Cook in the oven for 2 hours. 15 minutes before removing from the oven, add the kale and stir through to cook for the remaining time.
4. Serve with toasted pitta or rice, a sprinkle of mint or coriander, a dollop of coconut yoghurt, and a squeeze of lemon or lime juice.
