Being vegan is nothing new, but just 10 years ago it would have been overwhelming and vegans would have found it acceptable to find meat and dairy free meals acceptable. Now the dynamic has changed: Grocery stores have shelves stocked with frozen vegan burgers, and restaurants label meat-free and dairy-free products with a green V. Veganism is trending, and by eliminating animal products and increasing the proportion of vegetables, it offers potential health benefits such as improved nutrition heart health and weight loss. But it’s a big diet change, and simply announcing “I’m vegan” doesn’t eliminate the lifestyle challenges that can come with it.
“It’s not magic. “This is a difficult thing,” says Eric Rimm, professor of epidemiology and nutrition at Harvard T.H. Chan School of Public Health.
Also, veganism doesn’t automatically mean healthy.French fries (cooked in vegetable oil) and lemonade fit this definition. “Being vegan doesn’t relieve you of your responsibility to make good food choices,” says Meir Stampfer, professor of epidemiology and nutrition at Harvard T.H. Chan School of Public Health.
The first big question to ask yourself when going vegan is how to make these wise food choices.
