This is a perfect summer time healthy vegan salad! It is jammed with flavor and nutritious ingredients, especially if you are looking to add more cleansing and naturally beautifying foods into your eating plan.
Quinoa has B vitamins and complete plant protein, great for energy. And avocados contain vitamin E, healthy fats, folate and potassium. It has an abundance of dietary fiber, which helps to eliminate toxic waste from the body and has a natural source of healthy fats which help to absorb vitamins and minerals and hydrate that lovely skin of yours. Ginger being the pure deadly food that it is – helps with digestion and poor circulation and carrots are loaded with vitamin A, help with eyesight and is an essential antioxidant for glowing skin! So basically this quinoa salad rocks on the feel good food department and will aid with keeping that summer glow!
3 medium carrots
2cups quinoa, cooked
½ cup of coriander
For the dressing:
Drizzle of olive oil
½ cup coriander, chopped finely
2 limes, juiced (¼ cup)
1 tsp ginger root, grated
1 Tbsp of agave syrup
Sprinkle of sea salt
Some people find cooking quinoa difficult but just follow this simple direction and you will be fine! : first rinse it in a sieve. Then add 1 cup quinoa, 2.5 cups water and a tsp sea salt to a pot. Bring to a boil, reduce heat to minimum, cover and simmer for about 10 minutes. Remove from heat and fluff with fork. And you’ve done it!
Now grate the carrots or shred them – whatever way you prefer yourself. Then chop the fresh coriander finely. Cut the avocado into small near cubes.
To make the dressing just put all the ingredient for it into a bowl and mix.
Then add everything into the quinoa and mix! Garnish with some coriander and enjoy!
