Vegan GF banana, cranberry and pecan bread 

This bread is absolutely delicious and so easy to make ! It’ll be a hit with all the housemates, significant others and family! Plus the waft of beautiful baked goodness and spices is brings around the home is lush! 

Here we go! 

Firstly preheat the oven to 200 degrees Celsius then get out the baking bowl!! 

Recipe:  

1 1/2 cups of gluten free self raising flour 

2 large tablespoons of baking powder 

1 tablespoon of ginger spice 

1 tablespoon of ground cinnamon spice 

1/3 cup of coconut palm brown sugar (or any brown sugar will do!) 

2 large bananas

2 large spoons of Coconut oil 

1/4 cup of dried cranberries 

1/4 cup of pecans (chopped or halved) 

Directions

Put the banana, spices, sugar and coconut oil in a food processor and mix until a paste like thick dense sauce forms.

Then empty into the baking bowl onto the flour, baking powder, cranberries and pecans. 

Mix altogether until the moist and dense dough forms.

Line your baking tray with coconut oil and empty the contents into it. I sliced some banana and placed the slices down the centre of the mixture so that if have some nice crispy banana slices on top. Whatever works for you! 

Place in oven for about 30-35 minutes checking frequently and once it is browned and cooked inside. It’s time to take out and place on cooking wire rack. 

My particular bread here was half a mix (you just have to double what I have outlined above) and when placed in the baking tin it was very low down so the bread was about 3 inches thick but tasted delicious and was fluffy inside and perfectly tasting! 

If you want to double the mixture for a thicker base bread – then please add extra cooking time in oven ! 

Then dig in! Enjoy !

Ps yes it’s a little brown burnt on top just how I like it 😜😜
