Gluten free vegan Scones 

I felt like baking tonight and what better aroma to be wafting throughout your home than the smell of freshly baked scones ! 

Easy to make – they taste delicious with a dollop of jam and vegan butter or cream 💕💕💕 

Recipe :

1 cup of coconut flour 

2 cups of gluten free all purpose baking flour 

2 tablespoons of coconut palm sugar 

1 cup of coconut and almond milk (alpro do the new mixes and they are great!)

1 tablespoon of lemon juice

1/4 cup extra light olive oil

1 tsp gluten-free vanilla extract

1 chia egg

1/2 tsp xanthan powder 

2 tablespoons of gluten free baking powder

1/4 teaspoon of salt (I used Himalayan) 

Directions

Mix the ingredients altogether in a large baking bowl slowly and allowing plenty of air to get in. Make sure everything is very well mixed and combined. 

Roll your dough out onto a floured surface and divide to form a ball and shape into flat 2 inch circular scones like discs.

Gently brush tops with vegan non-dairy milk.
Bake at about 200 C / 400 F for about 20-25 minutes. Checking regularly with the eye of a hawk like me 😂😂

Cool on a cooling rack before serving ….. Ah who am I kidding just dig in once you slice them bad boys open and smother them with Jam and (vegan) butter ! Enjoy !!
