Vegan Lasagne 

This rustic lasagne recipe is super easy and tastes divine! Be sure to source some decent gluten free lasagne sheets as that will be the main thing for making this dish really work. This is also a low fod map recipe with no garlic or onion – but by all means if you wish to add it in – please do so. 


Gluten free lasagne sheets 

A punnet of baby tomatoes 

2 cups of water 

1 courgette 

2 cups of mushrooms 

Bunch of fresh basil 

Large bag of fresh spinach 

Grated Vegan cheese 

Salt and pepper 

Firm tofu

Balsamic glaze 


Set the oven to 200c. 

Mix your tomatoes, water and fresh basil into the processor until it becomes a chopped thick chunky passata sauce. Add in a sprinkle of salt and pepper. 

Now start to layer the lasagne with the base layer of passata, chopped mushroom, courgette, tofu and spinach- then add the gluten free lasagne sheets and repeat layers like so until recipe is all used up to compile a superb sandwich of lush colourful layers of lasagne topped with grated vegan cheese. 

Place the deep lasagne dish into the oven for about 30 mins checking frequently. 

Take out of oven and let stand for about 5 minutes then square off portions and serve!
