Vegan Bagels

I was so excited when I learnt that GoodnessGrains brought out a dairy free gluten free and egg free veg bagel 💛 if your in the shops and find this brand – try them out – their bagels have become my ‘bread’ cheat day favourite!  

 
Here is what I came up with today for two alternative vegan bagel recipes: 

AVOCADO AND HEIRLOOM TOMATOES ON A BED OF WALNUT PATE    
This is super delicious and has so many good fats going on. You have your vitamin C also in the tomatoes and some added protein in the walnut pate – the recipe is listed below: 

Walnut pesto :

Simply soak 1 1/2 cups of walnuts in water for about and hour and a half. Drain. 

Add 1 carrot and 1 celery stalk to the food processor along with the walnuts and add a drizzle of gluten free soy sauce or tamari. With a sprinkle of salt. Mix and enjoy as a spread on this beautiful bagel with half an avocado sliced and some heirloom tomatoes with a sprinkle of pepper and garnished with parsley. Basil would also be a nice addition! 

Next : 

ROASTED AUBERGINE AND COURGETTE ON A BED OF RED CABBAGE PESTO and FIG 
This is also super tasty. There are a lot of flavours bursting from this bagel and all so grounding and earthy. The red cabbage pesto is so so so good for you. Insoluble fiber from red cabbage prevents constipation, lowers the risk of developing diverticular disease and helps relieve the symptoms of some gastrointestinal conditions, such as irritable bowel syndrome. It’s easy on the tummy and tastes delicious. 

Red cabbage pesto

1/8 head of red cabbage 

1 cup of drained soaked almonds (let soak for at least an hour before hand) 

1 drizzle of olive oil and red wine vinegar 

1 small fig 

And blitz in the processor 

Spread on the bagel and add roasted sliced aubergines, courgette and fresh raw fig. With a garnish of parsley. Enjoy 🌿👌🏽🙏🏽
