Rustic Mediterranean soup 

Beautiful hearty soup for late breakfast today made fresh and from scratch 🌿🙌🏼 No filter needed 🌿
This is jammed with essential vitamins and minerals. In fact The highest amount of Vitamin C in a bell pepper is concentrated in the red variety. Which can also be used on this recipe only I only had yellow peppers in the house. Red bell peppers contain several phytochemicals and carotenoids, particularly beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits. The capsaicin in bell peppers has multiple health benefits.

Recipe (serves one)

Roast or lightly sauté : 

1/3 aubergine

1 yellow bell pepper 

2 spoons of Extra virgin olive oil 

Then add in: 

I large cup of water 

Vegetable stock 

I cup of passata tomato or purée 

Sprig of fresh Thyme 

Salt and pepper to taste 

Blend in processor 

Basil to garnish 😍✌🏻️
