Butternut Squash summer wrap

Beautiful butternut squash reduces the risks for developing asthma and it is known that risks are lower in people who consume a high amount of beta-carotene, the antioxidant that gives certain fruits and vegetables their bright orange pigments. Look for other orange plant foods like papaya, apricots, broccoli, cantaloupe, pumpkin this summer!

Full butternut squash- chopped into cubes 

6 – Mini Sweet peppers / capsicums – sliced 

6 – Heriloom tomatoes – sliced 

Quarter cup of Pine nuts 

Drizzle of olive oil and sprinkle of salt and pepper 

  Place all ingredients in an oven dish sprinkled with olive oil and let cook for about 30 minutes on 180. Check until golden brown starts to occur. Then add chopped spinach leaves. Turn oven off and leave dish in to keep warm. 

Now, Heat up saucepan and add: 

Sliced aubergine 

Sliced mushroom 

And set aside once golden brown. 

Heat up some gluten free chia wraps- most good Health food stores will have these! And spread some beet hummus on top then pour ingredients on.
