Tofu Wrap with Heirloom tomatoes

This is so delicious and simple! Perfect for a lunch time healthy eating course! heirloom tomatoes are packed with Vit C, are low in calories and are fat free! Enjoy With a green tea πŸ™ŒπŸ™πŸ½πŸƒ

Ingredients

4 chopped Heirloom tomatoes 

4 slices of Firm tofu 

Tablespoon of Agave syrup 

Tablespoon of Dense Balsamic syrup 

Drizzle of Balsamic vinegar 

2 thumbnails of chopped Ginger 

Large bunch of Spinach 

1 spread of Hummus ( chunky Greek hummus is best ) 

1 Gluten free wrap 

Recipe

Mix balsamic vinegar and rape seed oil on pan with chopped ginger – Briskly heat tofu on pan until it starts to brown and then add chopped heirloom tomatoes. Literally about 5 minutes will do on a high heat.

Heat up gluten free wrap for 30 seconds in the oven or microwave. 

Spread a tablespoon of hummus on it with a bunch of spinach. 

Then pour the tofu, ginger and tomato mix onto the wrap and enjoy!
