Spinach gluten free pancakes 

I had been meaning to try these for ages! And I just did and they were delicious ! This magnificent healthy green leafy veg is full of vitamins, antioxidants and minerals. Spinach, is one of the most regular foods that I eat daily as a vegan as it has an extremely high nutritional value and is rich in antioxidants. It is a good source of vitamins A, B2, C and K, and also contains magnesium, manganese, folate, iron, calcium and potassium. 

Adapting my own recipe for this was much fun and trial and error. There is some variations of recipes which include frozen berries and banana but I am more savoury than sweet! I made a banana spinach recipe but wasn’t my thing, My recipe is below! 



3 tablespoons of gluten free flour 

3 tablespoons of coconut flour 

One large spoon of agave syrup 

One large bunch of spinach 

Half tablespoon of gluten free baking soda

Half a cup of soya milk 

Pinch of Salt and pepper 

Mix finely in a food processor 

And pour in small dollops on the lightly oiled pan for mini pancakes on a medium heated pan. These are best cooked slowly. Otherwise they have a tendency to stick to the pan and get burnt very fast! Steve with whatever takes your fancy! I served mine with sautéed mushrooms and baby tomatoes!
