Red pepper pesto 

Homemade pesto with red pepper and butter bean 🙌👌✌️🌿 ladies this is great for that time of the month and easing the body when it aches and pains you, it also can help with the feeling of bloatedness too! ❤️

Red peppers contain almost 300 percent of your daily vitamin C intake. A powerful antioxidant, vitamin C is also needed for the proper absorption of iron. If you aren’t getting enough iron and become iron deficient, it’d be a good idea to try combining red peppers with your iron source for maximum absorption. This is so important for us vegans!!! 

Red bell peppers are also great sources of vitamin B6 and magnesium. This vitamin and mineral combination shows a decrease in anxiety, especially related to pre-menstrual symptoms. Vitamin B6 is also a natural diuretic, especially if you- like me- have cut caffeine out of your day which is also a natural diuretic – this will replace that source! so try stocking up on red bell peppers to reduce bloating and prevent against hypertension when the monthlys arrive! 

I added butterbean to the recipe to thicken it up with the pine nuts and to give that bit of plant based protein 💪

Recipe 

Half cup of pine nuts 

One red bell pepper 

One orange bell pepper 

Half a cup of butter beans 

Sprinkling of salt and pepper 

Splash of Olive oil and basil then a little drizzle of balsamic vinegar 👌 if you like it really runny then add the olive oil according to your own personal taste
