Vegan raw lime cheesecake 

This is one amazing treat. 

The base is made up of ground almonds mixed with coconut butter and medjool dates. 
The top layer is made up of avocado, lime juice, coconut milk and grated lime. And it can be made in minutes. 

This is a seriously health benefitting desert or sweet treat that is also under the raw food category as there is no baking at all!

Our almond base which has a high nutritional content – They reduce heart attack risk. They lower ‘bad’ cholesterol. They also protect artery walls from damage. Almonds also help build strong bones and teeth 😁 while Avocados provide protein, fiber, vitamins and minerals! Limes are fantastic for women’s health. Recipe

For the base: 

10 almonds 

5 medjool dates 

Large tablespoon of coconut butter 

Place almonds into food processor and blend then add medjool dates and coconut butter and blend again. Then spoon the base into the dish. I have used a glass this time! 

For the topping: 

1 ripe avocado 

2 limes 

1/4 cup of Date or maple syrup 

2 Large tablespoons of coconut milk or butter 

Place the ripe avocado in the food processor, add Juice of one lime, maple or date syrup and coconut milk and blend until creamy and smooth then spread on top of base and grate the other lime on top! 

Eat! It’s sublime!
